Healthy recipes for the Christmas table

In the Southern Hemisphere Christmas takes place in summer, with warm or hot temperatures, so it is important to adapt the traditional Christmas table and consume lighter and fresher dishes.

We offer you two recipes, a starter with avocados and a fruity dessert.

Avocados stuffed with walnuts and celery

Ingredients:

  • 7 avocados
  • 12 walnuts
  • Celery stick
  • Ketchup
  • 2 lemons
  • Salt and pepper

Regarding the preparation, start by peeling the walnuts and reserve 6, in halves, to put them as decoration. Afterwards, it is washed and the skin of the most tender part of 2 or 3 celery sticks is removed. Cut 2 avocados, removing the pit and mash the pulp with the help of a fork or blender. Lemon juice is then added so that it does not have a dark color.

The rest of the avocados are cut in half, the bone removed, and filled with the avocado puree prepared with the celery and walnuts. The tomato juice is mixed with a splash of vinegar and the stuffed avocados are seasoned. Finally, they are placed on a plate and served to diners.

Avocado is a favorable species for the heart thanks to its monounsaturated fats because it lowers the levels of bad cholesterol or LSL and increases the levels of good cholesterol or HDL.

Cup of peach and blackberries

Ingredients for 4 people:

  • 4 peach yogurts
  • 250 gr. blackberries
  • 1 peach
  • 1/2 sheet of puff pastry
  • 3 gelatin sheets
  • Water
  • 3 spoonfuls of sugar
  • 6 cookies
  • 2 tablespoons raspberry crunch
  • Mint leaves

To make this succulent dessert, we start by sprinkling the puff pastry with a little sugar. It is recommended to stretch it with the help of a roller and cut it into 15 × 1 cm strips, fold them into a V shape, and put them in the oven at 190 degrees for about 10 minutes. Then you have to cook the blackberries with 2 tablespoons of sugar for 4 to 5 minutes. The gelatin is then soaked in a jar with cold water, drained and dissolved in blackberry sauce. Then the mixture is strained, divided into 4 containers, and left to cool.

Later, the yogurts have to be beaten with a spoon and distributed among the 4 containers. Peel and chop the peach into cubes, dividing them into the bowls and chop the cookies with the help of a knife to spread them as well. Spread the crunchy raspberry on top, and decorate with the puff pastry sticks and mint leaves.

This is a healthy dessert that barely contains fat and provides vitamins and antioxidants, present in fruits.
