This is an ideal vegetable cheese to spread on bread, accompany salads or use it as a filling for tacos and similar preparations.
The recipe is: dairy free, egg free, gluten free, therefore it is suitable for vegetarians, vegans and celiacs.
- 1 cup of sunflower seeds
- 1/2 cup of water
- Juice of 1 or 1/2 lemon
- Sea salt to taste
- Optional: nutritional yeast, seasonings and / or herbs for flavoring
- 2 medium bowls
- Kitchen blender or processor
Place the sunflower seeds in a bowl, cover with water and soak overnight (about 8 hours).
Discard the soaking water, rinse the seeds well and place them in the glass of the processor. Add the water, lemon juice / juice and salt, and process well until a homogeneous creamy consistency is obtained.
Taste and correct the salt and / or lemon. Also correct the water according to the desired consistency.
Add your chosen herbs and seasonings and blend well.
The cheese is ready to eat. It is advisable to store it in a tightly closed glass jar in the refrigerator.
