How to Make Cauliflower Quinoa Burgers

We start by putting the quinoa in a strainer and put it under cold water to release the saponins (steroid or triterpenoid glycosides, named for their soap-like properties). We will rinse it until it stops foaming. We boil it following the manufacturer's instructions in how much water. We drain it and let it cool.
We also steam the cauliflower. With a food processor we chop the garlic, the parsley and the almonds. We put this mince in a large bowl and add the cauliflower, quinoa, grated cheese, beaten eggs, salt, pepper, turmeric and mustard. We knead until everything is united.
We form six hamburgers. Heat the oil in a nonstick skillet over medium heat and cook the burgers in batches until golden brown on both sides. We remove on kitchen paper to absorb the excess oil and serve.
With what to accompany the cauliflower and quinoa burgers with turmeric
I served this Turmeric Quinoa Cauliflower Burger Recipe with a Mixed Leafy Greens and Tomatoes Salad, no bun. If you want you can also make a mayonnaise and add a little hot chili (although it is an option that not everyone likes).
