These are basic muffins that can be flavored with whatever you like the most. In this case, I made it with orange zest but they can be made with lemon or tangerine zest, with vanilla aroma or with any other ingredient. It is important to flavor them because by not carrying eggs they can be without grace.
Orange Cupcakes
Ingredients
150 g of sugar (it can be normal or powdered sugar)
grated orange peel
2 tablespoons NO EGG
5 tablespoons of water
150 gr of oat milk
150 gr of oil (mild olive or sunflower)
250 gr of flour
1 sachet of lithines (raising agent)
Preparation
First, prepare the mixture that replaces the eggs with the 2 tablespoons of NO EGG and add 5 tablespoons of water and mix until well dissolved. Then the grated orange peel is added, only the orange part being careful not to let the white part of the peel fall off. Then the oat milk and oil are incorporated, mixing everything well.
When it is well mixed, add the flour and the litine envelope (2 envelopes if you want them higher). The flour is best sifted to avoid lumps. At this time you can see that the dough begins to foam, this is thanks to the bicarbonate that the lithines have. Once all the ingredients are well integrated, quickly pour it into the muffin molds trying not to fill more than 3/4 of the mold, so the dough will not overflow when it grows in the oven.
Now the muffins are baked for 20 minutes at 180º and they will be ready for breakfast and snacks.
With this amount of litin they do not grow too much, they do not remain above the mold, so you can also put two envelopes of litin instead of just one to make them rise more.
